Everything and a Happy Ending Book Review

Hey, y'all!  Not too long ago I was chosen to read and review this book.  I have not reviewed a book before this but I do love to read, so I jumped at that opportunity.  When I was first contact about Everything and a Happy Ending, I knew nothing about the book other than it was about the author's journey to happiness.  Through reading this book, I realized that it is like a self-help book.  Tia shares her trial and tribulations of her road to happiness to help others.  Tia states this book is her story of her truth...being a father's daughter.  I love that every chapter starts with a quote, however, my favorite quote is, "Be gentle with yourself.  You are a child of the universe, no less than the tress and the stars.  In the noisy confusion of life, keep peace in your soul".  I personally think that quote sums up the purpose of EAAHE to the T.  I also love that Tia states that she feared of opening up to her truths but goes on to state, "sharing the gifts I received through some of these experiences might offer something positive to someone".

I love that this book is her journey from admitting that she was ashamed of where she came from but through life's multiple lessons and pathways, she found acceptance of and her way back to her roots.  Tia reflects on childhood memories and understands it a bit differently with an adult mind.  In EAAHE, Tia owns up to her past and speaks the truth about it in a way to understand that everything happens for a reason at that time.  

I think this is a great book for those that enjoy reading self-help books, especially ones that involve making peace with your past and your family.  By reading EAAHE, one will be able to understand how much Tia had to overcome and understand to get her happy ending.  However, I personally did not care for it.  There are many pages to read before even getting to the first chapter and personally I had a hard time staying interested in the book.  With that in mind, there was many times I had to reread sections.  The book is well written, I just think this type of book is not for me, but if you like reading about other people's journey to internal peace and happiness, please check out Tia Shurina's book, Everything and a Happy Ending.

EAAHE, a memoir published by Mascot Books, details the journey & soulful shift of her story as Tia shares her holy grail & trail she took to transform her life. The book was a Plan C, maybe even D, but Tia was determined, after a dedicated intention & divine decision to start swimming more with the current of her life, instead of bucking that flow. Her ordinary, relatable story took an extraordinary, fantastical turn when she showed the Universe she was committed to her intention & her desire to be given an opportunity to make some new, different choices. 

EAAHE is a memoir that shares the “how’d that happen?” & the “how’d she do that?” in a holy hope of helping others to see life in a new way. EAAHE recounts 3 inter-connected relationships & love stories that enabled Tia to love truly, deeply, & most of all, love herself. Three special circles she rounded with Ray, her dad, & her ex-husband. A true woman’s full circle journey to learn how to really trust, how to “thine own self be true”, & then, the real & true love it led her ‘round back to. It shares how the power of love & a journey to intimacy helped her make a faithful flip which began a sacred circle & new chapter…one that would allow a different ending for a story she had begun writing for herself when she was much younger. Weightwatchers Chocolate Creme Cake Review

I don't know why I have not shared this before, however, I owe a great deal of my weight loss not only to working my butt off at the gym (well, I refuse to get rid of my butt...just tone it) but also following the Weight Watchers Program.

I love the program!!!!  It is the only diet program that I have tried that doesn't take items out of your diet.  You can literally eat whatever you would like....all you have to do is portion control.  You are able to eat normal food, you don't have to go out and buy all Weight Watcher products.  They even have an app you can download to track your food and progress.

However, if you do want to buy items with the Weight Watchers name on it, there are so many to choose from.  Smart Ones frozen dinners, cereal, bread and even delicious treats.  Now, I know there are many diet brands out there that claim to have yummy treats and they are on the expensive side.  So, with that being said, I had to give Weight Watchers treats a try...and of course I chose something with chocolate!!!

Weight Watchers Chocolate Creme Cake only uses up 4 points.  You can pick up a pack of 6 for about $3.50 a box.  Now, is worth the $3.50  ?  Does it actually taste good and help get rid of that chocolate craving?  Check out my video below to find out what I think about them.

Raspberry Bar

If y'all haven't noticed yet, I love baking.  I would love to just bake from the rest of my life, even though my thighs and butt would not like it very much.  Because I have be trying to eat healthier for the past 2 years, I don't get to do a bunch of baking for myself.  Thankfully, I have 32 residents that I cook for and they expect yummy desserts.

Now, when it comes to the residents that I cook for, they are in their 60s to 90 and LOVE their sweets.  Regardless, of how bad it may be for their blood sugar levels.  I do try to make more healthier desserts, however, they don't go over too well.  And let me just tell you, if I serve them fruit I might as well just start a riot with them.

So, with all that being said and know that I am in charge of making sure we are sticking as much as possible to their prescribed diets, I am always trying to find ways to incorporate more fruit.  Sometimes, I swear I am cooking for children....hiding healthy food in recipes that they will eat it without fussing about it.

Raspberry Bar

What you need:

3 c. frozen raspberries, thawed
4 c. rolled oats
2 c. flour
1 c. brown sugar
1/2 c. granulated sugar
1/2 c. crisco
2 tbsp. baking soda
2 tbsp. ground cinnamon
2 tbsp. lemon juice


1.  In a bowl, add thawed berries, granulated sugar and lemon juice, mix well.  Set aside.

2.  Preheat oven to 350.

3.  In a large mixing bowl, add brown sugar, cinnamon, baking soda and crisco.  Mix well.

4.  Add flour to brown sugar mixture, mix well (best to use hands, it will be clumpy).

5.  Add rolled oats to mixture and thoroughly mix.

6.  Prepare baking dish with foil and then spraying foil evenly with a good coat of nonstick spray.

7.  Divide oat mixture in half.  Place half of mixture evenly on the bottom of baking dish.  Make sure to cover the entire bottom.

8.  Evenly spread raspberry mixture over oats.

9.  Sprinkle the remaining oat mixture over the top, evenly.

10.  Bake in oven for 30 minutes or until brown and firm.  Enjoy!

I have already reviewed on place right here in Westbrook, Maine that makes my Love list and that is the Catbird Creamery, which is current being sold.  However, they have great ice cream (click here to check out the review).

Local Maine Eateries: The Super Great Wall ReviewSo, onto this week's review....The Great Wall in South Portland.  It happens to be a chinese buffet at an affordable price.  There are many dishes to choose from such as beef and broccoli, general tso chicken, crab ragoons, spring rolls, chicken on a stick and they even have a hibachi grill and sushi bar.  They have a salad bar, crab legs and some american food like pizza and mac 'n cheese.

This has been my family's favorite since we moved back up here from Florida almost 7 years ago.  There have been many birthday dinners and other celebrations we have had there.

Roasted Homefries

I don't know about y'all but because I grew up in the south, I love some homefries.  I personally think homefries is one of the best comfort foods.  If I was not eating healthier, I would have homefries all the time.  There is nothing better than some good seasoned homefries and ketchup....YUM!!!!

They are so versatile, you can add them to any meal and they just seem to complete the meal.  They can be made a different number of ways and they are all good.  However, it is important to know how to cook them the old fashion way before you try altering them to fit your needs.  These are very simple to make, as long as you pay attention to what is going on when those little bite-size babies go in the oven.

Once you get this recipe down, feel free to experiment.  That is what cooking is all about; experimenting with ingredients and spices.

Roasted Homefries

What you need:

3 lb. potatoes, washed
1/2 c. oil
3 tbsp. black pepper
3 tbsp. garlic powder
3 tbsp. onion powder
2 tsp. salt
cooking spray


1.  Preheat oven to 425.  Prep a large oven-safe dish by covering with tin foil and then spray with cooking spray.

2.  Cut potatoes into bite-size pieces.  Spread evenly in prepped dish.

3.  Sprinkle oil and seasonings evenly over potatoes, mix well.

4.  Cover dish tightly with plastic wrap and then cover with tin foil.  

5.  Bake for 1 hour or until potatoes are soft.  Remove tin foil and plastic wrap.

6.  Put oven on broil (high) cook potatoes for 5 minutes or until there is a golden tinted to potatoes.  Enjoy!
