What you need:
1 pkg. Gorton's Grilled Shrimp
1/2 c. diced pineapple
1/2 c. diced mango
1/2 c. cucumber, peeled and diced
1/2 c. diced bell pepper
4 tsp. lemon juice (recipe calls for lime juice, but I am allergic, so if you want use same amount of lime juice)
1/4 tsp. salt
Rice (whichever you prefer, I used white because it is what I had left)
1. Prepare shrimp as instructed on the back of the bag.
2. Clean and dice all the vegetable and fruit.
3. Combine pineapple, mango, cucumber, bell pepper, lemon juice, salt and pepper.
4. Portion out rice on the plate, top with fruit salsa mixture, then top with shrimp and eat immediately!!! Enjoy!!!
