Mozzarella & Mushroom Stuffed Chicken

Mozzarella & Mushroom Stuffed Chicken


What you need:

1 pkg. mushrooms, chopped
2 tbsp. minced garlic
2 boneless, skinless chicken breast
2 slices mozzarella
seasoning (any desired: I used Ms. Dash, Onion powder and pepper)

Directions:

1. In a skillet over medium-high heat, saute mushrooms and garlic for approximately 5-8 minutes or until mushrooms are soft and brown, not mushy though.

2.  After washing and cutting excess fat, cut chicken in half to make a pocket to stuff ingredients in.

3.  Break the slice cheese in half and layer them in the pocket of the chicken (repeat with other breast).

4.  Divide sauteed mushrooms evenly between the chicken and fold over the chicken to close the up the pocket.

5.  Bake at 350 for about 30 minutes or until chicken is done.  Enjoy!!!!
