Reinventing Leftovers: Chicken Fried Rice



What you need:

1 1/2 boneless, skinless chicken breast, cooked and diced
2 c. white rice, cooked
2 tbsp. sesame oil
1 small onion, chopped
1 c. carrots & peas (I didn't have peas at the time of the recipe lol)
2-3 tbsp. soy sauce (more to taste)
2 eggs, lightly beaten

Directions:

1. In a skillet (or wok), over medium-high heat, cook onion, carrots and peas with the sesame oil (remember I didn't have peas, so I just used carrots) until tender.

2.  Slide the vegetables to one side of the skillet, add the beaten egg and scramble cook.

3.  When the egg is cooked, mix in with vegetables.

4.  Add chicken, rice and soy sauce into the egg and vegetable mix.  Cook until chicken and rice are warm, about 5-7 minutes.
