Bacon & Tomato Crusted Haddock

Bacon & Tomato Crusted Haddock

What you need:

5 Haddock fillets
6 strips bacon, precooked cooked
1 medium onion
1 tbsp. minced garlic
1 c. dry stuffing mix, crushed
1 tomato, diced
2 tbsp. oil
1/4 c. parsley

Directions:

1.  Preheat oven to 400.  Dice up bacon and onion.

2.  In a large skillet, reheat bacon (about 3 minutes), add onion and garlic and cook until onion is golden brown (about 5 -6 minutes).

3.  Remove skillet from heat, add stuffing mix, tomatoes and parsley.  Combine thoroughly.

4.  Coat baking pans with nonstick spray, lay haddock evenly spaced and drizzle oil over each fillet.
5.  Evenly sprinkle crumb mixture over fillets.

6.  Bake for 10-15 minutes or until fillet flake. Enjoy!
