Roasted Homefries

I don't know about y'all but because I grew up in the south, I love some homefries.  I personally think homefries is one of the best comfort foods.  If I was not eating healthier, I would have homefries all the time.  There is nothing better than some good seasoned homefries and ketchup....YUM!!!!

They are so versatile, you can add them to any meal and they just seem to complete the meal.  They can be made a different number of ways and they are all good.  However, it is important to know how to cook them the old fashion way before you try altering them to fit your needs.  These are very simple to make, as long as you pay attention to what is going on when those little bite-size babies go in the oven.

Once you get this recipe down, feel free to experiment.  That is what cooking is all about; experimenting with ingredients and spices.

Roasted Homefries

What you need:

3 lb. potatoes, washed
1/2 c. oil
3 tbsp. black pepper
3 tbsp. garlic powder
3 tbsp. onion powder
2 tsp. salt
cooking spray

Directions:

1.  Preheat oven to 425.  Prep a large oven-safe dish by covering with tin foil and then spray with cooking spray.

2.  Cut potatoes into bite-size pieces.  Spread evenly in prepped dish.

3.  Sprinkle oil and seasonings evenly over potatoes, mix well.

4.  Cover dish tightly with plastic wrap and then cover with tin foil.  

5.  Bake for 1 hour or until potatoes are soft.  Remove tin foil and plastic wrap.

6.  Put oven on broil (high) cook potatoes for 5 minutes or until there is a golden tinted to potatoes.  Enjoy!
