Scrumptious Pot Roast

If there is one thing that sticks out from my childhood is the Sunday dinners that we had at my great-grandmother's.  She was the best cook and was able to make miracles out of the income she had.  Now, back then, the food was my main focus.  It was so yummy (and I am not saying that my mom wasn't a good cook, because she learned from my great-grandmother) and I just loved how warm and comfortable being in her presence was.

However, now that I am an adult and look back on those times, I don't just think about the food (solely, at least), I remember all the times that I got to spend time with family members.  The kids would all play together and the adults would all be in the kitchen with her chit chatting and catching up.

What really sucks now that I am in my thirties and my great grandmother has passed away, those family meals do not happen unless it is the holidays.  But thankfully, I am able to cook those traditional Sunday meals that bring the family members drooling over to my house (even if it is my immediate family).  And one of favorite meals is my scrumptious pot roast and because my family enjoys it so much, I figured y'all would enjoy it too.

Scrumptious Pot Roast

What you need:

3 lb. pork or beef roast
3 lb. med potatoes
3 lb. carrots
1 medium onion
1 pkt. brown gravy
1 pkt. au jus gravy
2 tbsp. black pepper
2 tbsp. garlic powder

Directions:

1.  In a large skillet on medium-high heat, sear black pepper and garlic powdered seasoned roast on both sides about 10 to 20 minutes depending on thickness.  (*Key is to leave on first side until the side of the meat is no longer red, but a brown color and then flip to the other side just long enough to get the sear color on that side).  Put meat into crockpot.

2.  Peel and cut potatoes, carrots and onions into bite size and add around the meat in the crockpot.

3.  In a measuring cup, add 2 c. and both gravy packets.  Mix thoroughly.  Pour over meat and vegetables.

4.  Fill the crockpot the rest of the way with water, cover and cook on medium for 4-5 hours or until meat is falling apart and vegetables are tender.  Enjoy!!!
