Roasted Parm Brussels Sprouts

Now, I will be the first one to admit that eating healthy or eating your vegetables is not something I enjoy all the time....I would much rather eat a cheeseburger with loaded cheese fries or ice cream.  But if you are trying to eat healthier, I like I am, you have to step away from the ice cream and cheeseburgers and eat more fruit and vegetables.

I haven't had an real issue with fruit...I like them all.  Of course there are ones that I prefer over others...such as WATERMELON.  But when it comes to vegetables, there are a few that I just do not like.  Brussels sprouts is definitely a vegetable that I do not like.  People used to tell me that if you like cabbage you will like brussels sprouts....boy were they SO WRONG!!!

With that being said, I am a firm believer that you have to experiment with food.  Just because I do not like brussels sprouts boiled, that doesn't mean I would not like them cooked some other way with different seasonings.  Hence, my recipe for y'all to try

Roasted Parm Brussels Sprouts

What you need:

2-3 lb. brussels sprouts
2 c. bread crumbs
1 c. Parmesan cheese
1/2 c. oil
2 Tbsp. black pepper
2 Tbsp. garlic powder
2 tsp. salt


1.  Preheat oven to 425.

2.  In a large bowl, combine all ingredients.  Make sure to thoroughly coat all brussels sprouts.

3.  Spread brussels sprouts evenly onto a nonstick baking sheet.

4.  Bake for 15 to 25 minutes or until sprouts are browned on one side and fork tender.  Enjoy!
